the lunch i just made consists of:
one and half chopped potato 🥔
one Roma tomato 🍅 (half of it chopped up and added to the omelette, other half seasoned with salt and pepper)
two eggs! 🥚
some chopped onion 🧅 and garlic 🧄 to taste (save the chopped onion and garlic for other meals! you can save the chopped onion and garlic together in a container)
shredded Mexican cheese 🧀
chopped green onion )))

fry the chopped potatoes, onions, and garlic in extra virgin olive oil and when it's cooked to softness, take it out and put cheese on top, then some chopped green onions.
then cook the omelette, whisk the eggs in a bowl, put salt and pepper, and green onions in to taste, then pour it into the pan, let it lay flat until it starts looking full (not clear when it's first poured on) and then put the tomatoes, onions, garlic into it ans gold the egg up until it's golden and has specs of brown. then put the cheese on when it's out of the pan. enjoy!
